Shelly's Carrot Soup
 
Ingredients:

4 c. broth (personal preference)

6 large carrots cut in 2” chunks

1 large onion cubed

2 cloves garlic, minced

2 Tbsp finely minced ginger

Pepper

Combine first five ingredients in soup pot. Cover, bring to boil, simmer partially covered for 15 minutes stirring occasionally.

In food processor, process manageable batches at a time until smooth. Add pepper to taste.
